医療施設で発生した食物媒介感染の症例やアウトブレイクにより、重篤な疾患、高額な医療費の損失、他の患者や医療従事者への感染伝播、および医療サービスの機能低下がもたらされる可能性がある。医療施設での脆弱患者に対する高栄養価の食事の提供には微生物学的安全性への体系的な取り組みが必要であり、これは危害分析重要管理点（hazard analysis and critical control point；HACCP）の原則に基づいて行われる。医療施設で提供する食品の種類は、食物媒介感染リスクが最小化するように選択すべきである。
